60 Days of Salad - Days 22-25

Day 22 - Spiced Roast Carrot Salad
Recipe: Taste

I liked this one - probably due to the roast vegies :)

Day 23 -  Rocket, Grape, Walnut and Parmesan Salad
Recipe: Losing the Last 5 Kilos - Michelle Bridges
I tried to make this one at the very beginning - but grapes weren't in season yet! I enjoyed this one, would like to try it with green grapes and pecans maybe?

Day 24 - Chicken and Peach Salad 
Recipe: Women's Weekly - Super Light Cooking
This one is a winner, I think.  Or it would be with sweeter peaches, and being patient enough to shred the chicken, rather than cutting it. Must make it again!

Day 25 - Baby Beet and Sugar Snap Peas

So I went to Gilbert's in Midland to buy the ingredients for this one, and of course, there were no canned beetroot - so I roasted fresh ones.  


They were super tasty! To the extent that I didn't even want to eat the sugar snap peas!

60 Days of Salad - Days 17 to 21

Day 17 - Lentil, Roast Pumpkin, Feta and Rocket Salad

I really liked this one. I've noticed a theme here - I like all the pumpkin ones!!

Day 18 - Salads from Veggie Mama 

Lentil Burger, and 5 salads. (Does that count as five separate salads??)
My favourites were the rice one and the one with pecans.
I hadn't been to Veggie Mama before, but it was awesome - keen to go again :)

Day 19 - Lemon, Chicken and Olive Salad

I really disliked this one - didn't even eat the leftovers, it was that bad!

Day 20: Roast Cherry Tomato and White Bean Salad 
Recipe: Taste
This one was pretty good! It had cheese and a roasted vegetable - awesome!!

Day 21 - Smoked chicken, mango and iceberg lettuce salad

So much salad! Yummy though!!

Day 14: Bean and Rocket Salad with Green Olives

I didn't love this one, but the dressing was okay!

Day 15: Poached Chicken and Broad Bean Salad

Pretty tasty, although not a favourite.

Day 16: Kiwifruit Salsa

Yup, its a salsa. So not really a salad.  But I found it in Taste's salad collection, and if Taste says its a salad, that's good enough for me!! Pretty yummy too - I never would have thought of putting kiwifruit in a salad.

Day 12: Pumpkin and Spinach Salad

60 Days of Salad - Days 10 and 11

I said last time that I was getting into the swing of things - that failed by the very next which, I mean the universe did not want me to have salad, of course!  I made risotto instead, which obviously doesn't count as salad, but it was so amazing that I think I should definitely share:

Creamy Brie and Mushroom Risotto:
The main ingredients in this are butter, cream and brie. Amazing!!

Day 10 - Crumbed Mushroom Salad
 This one is actually an old favourite - probably because the mushrooms are deep fried. Made for mum and dad when they got back from their trip.

Day 11 - Roast Carrot and Radish Salad:
This was tonight's salad.  You might notice that there are no radishes in the salad.  I can not find a single radish anywhere...Anyway, the salad was alright!

60 Days of Salad - Day 9

Getting into the swing of things - and actually enjoying salads!!  I still wouldn't pick a salad if there was a better option on the table, but maybe by Day 60 I will?

Chicken and Cucumber Salad:

150g chicken breast, sliced thinly
1 clove garlic, crushed
1/2 tbsp lemon juice
1/2 tbsp finely chopped fresh oregano
1/8 tsp paprika
2 slices wholemeal lavash/mountain bread
1 cucumber (200g) sliced thinly
1 green capsicum (175g) sliced thinly
2 medium tomatoes
1/2 tbsp coarsely chopped fresh dill
1/2 tbsp coarsely chopped fresh oregano
30ml white wine vinegar
1 tsp white sugar

1. Combine chicken, garlic, juice, oregano and paprika in bowl.
2. Heat grill and toast both sides of bread and break into large pieces.
3. Make salad of cucumber, capsicum, tomatoes, dill, oregano, vinegar and sugar.
4. Cook chicken and add to salad with bread.

I think I might need to work on my presentation skills - I literally threw this salad together and it shows....

Slacker! 60 Days of Salad, Days 6, 7 and 8

I don't know what happened at the end of last week, but it didn't involve blogging!!

It did include salads though :)

Day 6 - Mandarin, Lychee and Mint Salad:

I LOVE LYCHEES!! Mandarins, not so much.  But they went so well together that I'll have to rethink my stance on mandarins.

Day 7 - Shag Salad:

By Shag Salad, I mean chicken and avocado salad at the Lucky Shag, of course.  Loved it, probably because it wasn't under the regulation 300 calories...

Day 8 - Asparagus, Pea and Spinach Salad:

I was prepared to hate this salad.  It didn't excite me.  BUT the peas and the dressing not only saved it, but made it into a salad that I like!

Pear and Walnut Salad

2 pears, sliced
80 g spinach
1/4 cup walnuts, chopped
1tbsp lime juice
2 tsp olive oil
black pepper

60 Days of Salad - Day 2

Today's salad was much more successful than yesterdays - delicious!!

Salad Two: Pumpkin and White Bean Salad:

Recipe from Women's Weekly - After Work Healthy.

                                         500g pumpkin, cut into 2 cm pieces, roasted in oven
                                         400g cannellini beans
                                         100g rocket
                                         1/2 cup loosely packed coriander
                                         1 tbsp pine nuts

                                        1/8 cup lemon juice
                                        1 tsp finely chopped chives
                                        1 tsp finely chopped lemon rind
                                        1/2 tsp olive oil
                                        1/4 tsp white sugar

                                        Serves 2; 261 calories per serve.

60 Days of Salad

I'm not a fan of salad - honestly, I HATE the stuff.  Problem is, I'm a hell of a lot heavier than I want to be, so I'm going to learn to love salad. Inspired by my friend Ruth, I've decided to do a challenge - 60 Days of Salad! 

The Rules:
1. Every dinner I make will be salad.
2. Salads to be under 300 calories / 1200kJ
3. If I go out, I order a salad - free pass on the calorie count!
4. 60 Days of Salad will not necessarily be 60 consecutive days...
5. I will post a photo of each salad.

Not a pretty salad.  Not the tastiest either, but nice and filling!!
