60 Days of Salad - Day 9

Getting into the swing of things - and actually enjoying salads!!  I still wouldn't pick a salad if there was a better option on the table, but maybe by Day 60 I will?

Chicken and Cucumber Salad:


150g chicken breast, sliced thinly
1 clove garlic, crushed
1/2 tbsp lemon juice
1/2 tbsp finely chopped fresh oregano
1/8 tsp paprika
2 slices wholemeal lavash/mountain bread
1 cucumber (200g) sliced thinly
1 green capsicum (175g) sliced thinly
2 medium tomatoes
1/2 tbsp coarsely chopped fresh dill
1/2 tbsp coarsely chopped fresh oregano
30ml white wine vinegar
1 tsp white sugar

1. Combine chicken, garlic, juice, oregano and paprika in bowl.
2. Heat grill and toast both sides of bread and break into large pieces.
3. Make salad of cucumber, capsicum, tomatoes, dill, oregano, vinegar and sugar.
4. Cook chicken and add to salad with bread.


I think I might need to work on my presentation skills - I literally threw this salad together and it shows....

Slacker! 60 Days of Salad, Days 6, 7 and 8

I don't know what happened at the end of last week, but it didn't involve blogging!!

It did include salads though :)

Day 6 - Mandarin, Lychee and Mint Salad:

I LOVE LYCHEES!! Mandarins, not so much.  But they went so well together that I'll have to rethink my stance on mandarins.

Day 7 - Shag Salad:


By Shag Salad, I mean chicken and avocado salad at the Lucky Shag, of course.  Loved it, probably because it wasn't under the regulation 300 calories...


Day 8 - Asparagus, Pea and Spinach Salad:


I was prepared to hate this salad.  It didn't excite me.  BUT the peas and the dressing not only saved it, but made it into a salad that I like!

60 Days of Salad - Day 5

This is another salad I've had before - one of the few I actually like!


Pear and Walnut Salad

2 pears, sliced
80 g spinach
1/4 cup walnuts, chopped
1tbsp lime juice
2 tsp olive oil
black pepper

60 Days of Salad - Day 2

Today's salad was much more successful than yesterdays - delicious!!

Salad Two: Pumpkin and White Bean Salad:


Recipe from Women's Weekly - After Work Healthy.

                                         Salad:
                                         500g pumpkin, cut into 2 cm pieces, roasted in oven
                                         400g cannellini beans
                                         100g rocket
                                         1/2 cup loosely packed coriander
                                         1 tbsp pine nuts

                                         Dressing:
                                        1/8 cup lemon juice
                                        1 tsp finely chopped chives
                                        1 tsp finely chopped lemon rind
                                        1/2 tsp olive oil
                                        1/4 tsp white sugar

                                        Serves 2; 261 calories per serve.

60 Days of Salad

I'm not a fan of salad - honestly, I HATE the stuff.  Problem is, I'm a hell of a lot heavier than I want to be, so I'm going to learn to love salad. Inspired by my friend Ruth, I've decided to do a challenge - 60 Days of Salad! 

The Rules:
1. Every dinner I make will be salad.
2. Salads to be under 300 calories / 1200kJ
3. If I go out, I order a salad - free pass on the calorie count!
4. 60 Days of Salad will not necessarily be 60 consecutive days...
5. I will post a photo of each salad.
